Cheesy Mexican Chicken & Rice Casserole Recipe

When life gets hectic sometimes I do not make it to the grocery store for a week, therefore when I plan my shopping there are always staples that I pick up like chicken, rice, various soups (for cooking), VELVEETA®  and Ro*Tel® .   I keep a list on my refrigerator and plan my grocery list to include any staples I run out of just to be sure that I don’t forget. My family is trained to do the same thing if they are the last to use something and it has become a habit here.

This week was one of those weeks that I didn’t make it to the store, luckily last week I stocked up on my staples and was able to complete a quick, easy meal for my family with no fuss.  Did you see the new Queso Cheese by VELVEETA®?  I bought and this was the first time we tried it.  It was delish!

Cheesy Mexican Chicken & Rice Casserole

Ingredients

3 – 4 boneless, skinless chicken breasts

1 cup white rice

1 can of cream of onion soup

2 cans water (8 oz)

10 – 14 oz of VELVEETA® Queso Cheese

1 can Mexican Lime & Cilantro Ro*Tel®

Directions

Brown chicken breast while oven pre-heats to 350 degrees. In a 8 x 8 casserole dish mix together rice, Ro*Tel®, and soup. Once chicken is browned add to casserole and place in oven. Bake 1 hour covered with foil. Top with slices of VELVEETA® and place back into oven for 30 minutes or until chicken is cooked thoroughly.  Serve.
