Spring Has Sprung: Easy Icebox Cake Recipe
Spring has sprung her in Florida and now is the time when we start planning those family picnics and get-togethers. For us these times are always centered on great food (such as deviled eggs and Watergate salad) and drinks. But with upcoming holidays such as Easter we try to find Easter recipes and things that don’t take up too much time in the kitchen so that we can spend more time together as a family.
One of our favorite recipes for Easter is the bunny cake. There are a lot of variations on the cake and ideas and I’ve even pinned some on my Spring Has Sprung Pinterest board. Every year, since my kids were really little we enjoyed decorating the cake but this year we are adding something new to our table, the Easy Icebox Cake!
Easy Icebox Cake Recipe
Icebox cake is the perfect addition to your Easter desserts. It’s easy and is sure to please everyone regardless of their ages. The kids will love to help and of course clean the pudding off the spatula. The adults won’t be able to have just one serving.
You will need:
1 (5.9 oz) box of JELL-O Vanilla Flavor Instant Pudding (save time and use instant)
1 (5.9 oz) box of JELL-O Chocolate Flavor Instant Pudding (again save time with instant)
1 box of graham crackers
2 bananas (peeled and sliced)
4 cups of milk to make the pudding
1 8 oz tub of COOL WHIP Whipped Topping
Prep
- Cook both vanilla and chocolate puddings
- Crush 4 graham crackers in a baggie with a rolling pin
Create
- Line a 9×13 pan with graham crackers. You may need to cut a few to fit around the edges.
- Pour chocolate pudding over the graham crackers
- Randomly lay sliced bananas on chocolate pudding
- Apply another layer of graham crackers
- Pour vanilla pudding over graham crackers to create second layer
- Randomly lay sliced bananas on vanilla pudding
- Sprinkle graham crackers crumbs over top
Refrigerate for at least one hour. Top with COOL WHIP Whipped Topping and enjoy!
Prep Time: 20 minutes
Cook Time: None unless you use cooked pudding.
Yield: 10 – 12 half cup servings

Swiss Chicken Strata
I was inspired by the stained glass bars on the Kraft recipe site. Jello is always refreshing when it is so cold. This recipe would be great for those super hot days ahead.
