World Pasta Day Featuring Barilla Lemon Spaghetti Recipe

Today we are featuring a recipe from Barilla’s “The Modern Family Pasta Cookbook” in celebration of World Pasta Day – Lemon Spaghetti.

In honor of world Past Day we choose to make the Lemon Spaghetti recipe featured in “The Modern Family Pasta Cookbook: because it was quick, easy, and it gave me an excuse to use fresh basil from my garden.  It was hard, however, to choose one recipe for the cookbook as there are a lot of simple recipes that would help any mom overcome her barriers to getting a meal on the table in little to no time at all.

Many people think since I work at home that I have nothing to do all day but cook delicious meals and desserts, but believe it or not I have even less time now for cooking than I did when I worked in corporate America.  I’m not alone either, more than half (58%) of parent polled by Barilla say their life is more hectic now than a year ago.  The leading activities that presenting a challenge are all things I’m faced with now more than ever being a work-at-home mom, (1) work, (2) household chores, (3) errands (4) kids’ after school activities, and (5) kids’ homework.

Pasta provides a solution for me because (1) I always have a box of Barilla in my cabinet and (2) it is simple to prepare!

Lemon Spaghetti

Lemon Spaghetti

Ingredients

1 pound Barilla Spaghetti
2/3 cup Olive Oil
2/3 cup Parmigiano-Reggiano Cheese Freshly Grated
2 Fresh Lemons
3/4 teaspoon Salt
1/2 teaspoon Black Pepper Freshly Ground
1/3 cup Fresh Basil Chopped

Directions

Start by juicing the lemons to yield 1/2 cup of fresh lemon juice.  Grate lemon peels to yield 1 tablespoon lemon zest, set aside.
In a separate bowl whisk the oil, Parmigiano-Reggiano cheese, lemon juice, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a large bowl to blend.
Set the lemon sauce aside. Meanwhile, bring a large pot of salted water to a boil.  Add the spaghetti and cook, stirring occasionally, until tender but still firm to the bite, about 8 minutes.
Drain, reserving 1 cup of the cooking liquid.
Add the spaghetti to the lemon sauce, and toss with the basil and lemon zest.  Toss the pasta with enough reserved cooking liquid, 1/4 cup at a time, to moisten.
Season the pasta with more salt and pepper to taste. Transfer to bowls and serve.

    This sounds delicious. I love anything lemon

  2. Yum, I love pasta and I love it even more when it involves lemon. I usually cook up some garlic and onions and spinach with mine then toss it all together with lemon. Never thinking to use basil is a major duh on my part! Will have to try this recipe.

    The composition of pasta with lemon seems to be a good one. I am a lover of pasta & always prefer to learn different recipe of pasta. i am going to try this for sure. Let’s hope for the best. Thanks.
