It’s National Pork Month and Costco is celebrating with the National Pork Board by bringing savings each week to select cuts of pork. This week you will find a $2.50 savings off boneless pork chops and roasts and in order to inspire you I am going to share my Garlic Infused Herb Crusted Pork Loin recipe with you on Thursday (see photo above). It’s quick and easy and the most deliciously moist roast you will ever experience. On Thursday I will also share a pork inspired giveaway for some Costco cash so that you can purchase your own pork, so make sure you stop back.
In the meantime visit Costco’s In The Warehouse and find some great recipes and tips featuring the special cut of the week. You can also find a ton of information on pork at PorkBeInspired.comincluding an informative guide on the various cuts of pork and recommended cooking times. Speaking of cooking times did you know that in May, the USDA reduced the temperature guidelines for pork loins, chops and roasts from 160 to 145 degrees F, with a three-minute rest time? I cooked my loin using those guidelines this weekend and it produced the juiciest piece of pork ever.

Pork lions are very good but I prefer a pork loin…lol….
