Grilling Tips and Tricks: Steak-Over Grilling Challenge

It’s summer, well it’s close enough now that it is spring.  Living in Florida definitely has it’s benefits and one of them is that the grilling season is year round for the most part.  This past weekend we took advantage of the beautiful weather and hosted our first annual Grill Off!

My secret?  I use Kingsford charcoal (no generic brands) and I marinate it in a secret blend of herbs and spices and serve it up medium rare.  Although my sizzling steak is perfect with no condiments I do serve it with a side of A-1, it’s my son’s favorite seasoning.  He doesn’t even try his steak without smothering it first.  I was raised to eat my steak straight from the grill with no sauces.

I compliment my steak with grilled corn and a hotlips chili butter. There is nothing more perfect on a warm spring evening then a juicy steak, corn, and a glass of wine.

Secret Grilling Tips:

  1. If you like your steak juicy take it off the grill right before you think it is “done enough”.  Steak continues to cook once you take it off the grill so if you want a perfect medium rare steak take it off when it looks a little redder than you like it.  If you like it well done, take it off when it still has a tinge of pink.  Never over cook a steak.
  2. Never poke holes in your steak when you are cooking it.  The juices will run out and you will be left with dry steak. Sear your steak over hot coals to lock in juices on each side 1 to 2 minutes and then move to the outer part of the coals to finish cooking at medium heat.
  3. When you take the steak off the grill add a tablespoon of creamy butter infused with fresh, minced garlic on top.  It melts in and creates a deliciousness you only find from the pros.
