Orange Creamsicle Parfait Recipe

I love spending time in the kitchen with my boys, but with my youngest it is more of a challenge than it is fun.  Most recipes I find don’t take my son’s ADHD into consideration and what starts out as a fun project ends up being stressful for both of us.  James gets bored easily and he is so fidgety that I’m limited as to what tasks I can give him.  I guess that’s why I love the recipes found on Lil Snappers recipes for kids page.  The recipes are simple, healthy, tasty and perfect for kids of all ages. Regardless of your child’s age or their skill set you can find the perfect recipe.

James and I decided to make the Orange “Creamsicle” Parfaits Recipe found on Lil Snappers website.  Since the prep time was only 10 minutes this was a perfect recipe for keeping his attention.  We also got to use some kitchen tools that James has always wanted to use such as our zester to get some zest from our navel oranges. He was especially proud of his masterpiece and he loved creating dessert for everyone.  He had so much fun he wants to make the Apple Sailboat Dippers next.

Out of the 20+ varieties of Lil Snappers available we got to try the mandarin   navel, and tangelo oranges as well as the Pink Lady apples.  I’m pretty excited about them coming (hopefully) to our local grocer because I think a bag of mandarins would make the perfect snack to send to daycare and school for parties.  The bags are super convenient, resealable and the fruit is perfect size for little hands and small appetites.  The 3-pound bags are great for the fridge too because you can store them easily.

Right now Lil Snappers are only available in limited regions such as Louisiana (New Orleans), Florida (Jacksonville, and North Carolina .  If you would like your local grocer to carry them be sure to contact your produce manager and request that they stock Lil Snappers.  Otherwise, here are the stores in the limited areas that are stocking them now:
