Baker’s Secret Holiday Baking Giveaway & Roasted Eggplant Recipe
Did you see my post featuring the Caramel Sea Salt and Bacon? Well I thought I would share one more recipe for you to use during the holidays, Baked Eggplant. It’s simple and it has a ton of uses. You can add it to your relish tray during the holidays or serve it on top of a crusty French baguette with fresh basil and mozzarella cheese. Use your imagination and your Baker’s Secret Cookie Sheet to create the perfect Baked Eggplant!
- 2 Eggplant
- Olive Oil
- Sea Salt
- Ground Black Pepper
- 6 Cloves of Garlic sliced thick
- Pour a gentle amount of olive oil on the bottom of your cookie sheet. Slice eggplant about 1/2 to 1 inch thick and place on sheet. Score eggplant and stuff with slices of garlic. Top with sea salt and ground black pepper. Drizzle additional olive oil on top.
- Place in pre-heated 500 degree oven for 15 minutes. Turn and cook an additional 15 minutes.
- Serve on top of crispy bread with mint, balsamic vinegar, and mozzarella.

My favorite holiday recipe doesn’t have a name, my family has always made them and some of my earliest memories are of making them with my mom (who is now deceased) they are ritz crackers with peanut butter smeared in them and dipped in almond bark or chocolate and covered in sprinkles!

My favorite holiday recipe is my moms vegetarian stuffing. I love her take on it because I feel like it is as good as the original (one of my favorite sides during my meat eating years). It is moist and rich in flavor.

Our special Sweet Potato casserole, I have never had anything close to what my family recipe, it is so delish.
Banana pudding, homemade. My mom taught me her recipe and she is gone now, we lost her to breast cancer. When I ,ake any recipe she taught me I feel closer to her and feel like she is watching over us.

I love roasted garlic mashed potatoes, they take me back to my childhood.
