Old Fashioned Peanut Butter Cookies Recipe

It’s Spring! I love it because it’s nearing beach season in Florida.  I hate it because it reminds me of all the bad choices I made over the winter and now my bathing suit just doesn’t fit. Old Fashioned Peanut Butter Cookies Recipe

If you are looking for something to snack on that offers less sugar, this is the recipe for you! We are big fans here of peanut butter cookies but we are trying to make healthier choices around here so this is the perfect compromise for us.  We hope you enjoy them as much as we do.

Ingredients

  • 2 c. peanut butter
  • 1/2 c. SPLENDA® Sugar Blend (this product contains sugar)
  • 1/2 c. SPLENDA® Brown Sugar Blend (this product contains brown sugar)
  • 2 eggs
  • 2 t. baking soda
  • ¼ t. salt
  • 1 t. vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In bowl mix peanut butter, SPLENDA® Sugar Blend, SPLENDA® Brown Sugar Blend and eggs until combined, usually about 2 minutes. Add in baking soda, salt, and vanilla extract. Mix thoroughly.
  3. Roll dough into small balls about 1 ½ inch. Place on cookie sheet lined with parchment paper roughly 2 inches apart. Gently press down using the tines of a fork making a criss-cross pattern. Dip the fork in SPLENDA® Sugar Blend to help keep it from sticking to the dough.
  4. Cool on rack. Makes 2 dozen.
