“Kid-Approved” Cream Cheese Stuffed Banana Bread Recipe

Now that school is back in session and fall is nearing (yes, even in Florida we celebrate fall) it’s time to start baking with the kids.  I’m sure my son isn’t the only one who loves to bake.  Whenever he sees me working in the kitchen he is looking to stir something, measure something, or lick a bowl.  For me, it is important to teach him how to cook and bake because one day he will win a girl over with his culinary skills.  However, if I’m going to teach him I want to make sure he understands the importance of using fresh ingredients and better choices.  Now that we no longer have our chickens we have to rely on buying our eggs in the store and that’s why we rely on Eggland’s Best.

“Kid-Approved” Cream Cheese Stuffed Banana Bread Recipe

INGREDIENTS

1/2 cup softened butter
1 cup white sugar
2 Eggland’s Best eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
4 oz. cream cheese
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream (fat-free)
2 medium bananas, mashed

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan.
In a large bowl, stir together the butter, sugar, eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream and bananas. Spread 3/4 of the mixture evenly into the prepared pan. Slice cream cheese and place evenly across the mixture.  Finally, add the remaining batter and spread evenly over cream cheese.
Bake at 350 degrees F for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

    This sounds delicious! I love banana bread and never heard of cream cheese stuffed banana bread. I bet this adds some flavor!
